燕尾服芝士蛋糕 Tuxedo Baked Cheesecake

底层材料
消化饼干180克(捣碎)、可可粉1汤匙、溶解牛油120 克、黄糖20克
180 g digestive cookies(crushed), 1 Tbsp cocoa power, 120 g melted butter, 20 g brown sugar

蛋糕材料
Philladelphia奶油芝士250克(室温)、盐1⁄2茶匙、细糖50克、粟米粉1汤匙、普通面粉15克、A蛋1粒、无糖鲜奶油80毫升、 咖啡酒1-2汤匙、柠檬皮茸适量、爱情果肉1汤匙
250 g philladelphia cream cheese(at room temperature), 1⁄2 tsp salt, 50 g castor sugar, 1 Tbsp corn flour, 15 g plain flour,1 “Grade A’ egg, 80 ml dairy non sweetened cream,1-2 Tbsp Kahlua ‘coffee liquer’, grated lemon rind , 1 passion fruit pulp

装饰
巧克力150克(溶解)
150 g chocolate(melted)

挤袋和钻嘴、松饼模具12-13个
piping bag & tip, 12-13 pcs Muffin moulds

底层蛋糕做法
把所有材料混合均匀,然后取1汤匙混合料挤压在模具里,形成底层,收入冰箱待用。(图1-4)
In a mixing bowl, combine all ingredients till well mixed. Press about 1 tablespoon mixtures onto the each individual muffin casing. Refrigerate until needed.(pic 1-4)

蛋糕做法
1.把烤炉预热至170℃,放入一盆水,待稍后隔水烘焙用。
1.Pre-heat oven @ 170℃. Place a tray of water in the oven for placing the individual cheese tarts later.

2.用电动搅拌器把芝士奶油,盐及糖搅拌至浓郁。(图5)
2.In an electric beater, beat cream cheese with salt, sugar until cheese is creamy. (pic 5)

3.加入粟米粉和面粉,搅拌均匀,然后加入鸡蛋和鲜奶油,搅拌至刚刚混合即可,再加入咖啡酒、柠檬皮茸和爱情果肉。 (图6-8)
3.Beat in corn flour, flour until well mixed. Then beat in egg and cream until just mixed. Beat in Kahlua coffee liquer, lemon rind and passion fruit pulp. (pic 6-8)

4.把面糊倒入底层模具里。隔水烤20-25分钟,以竹签插入测试熟度后取出,待凉。(图9)
4.Pour the cheese mixture over chilled digestive base. Bake cheesecake in pre-heated oven for 20-25 min¬utes or until skewer inserted in the center comes out clean. Remove from oven, leave to cool. (pic 9)

5.隔水把巧克力煮溶解后让它稍微冷却,以方便使用。
5.Double boil the chocolate to melt it and let chocolate cool awhile.

6.把巧克力装入挤袋里,如图般挤出燕尾服造型。(图10)
6.Fill up the chocolate in the bag and pipe to shape tux¬edo as in the picture. (pic 10)

7.收入冰箱。
7.Refrigerate and serve chilled
