烟肉煎饼Bacon Pancakes

【材料】
A:普通面粉150克(筛过)、白糖1汤匙、发粉11⁄2 茶匙、苏打粉 1/2茶匙、盐1/2茶匙、buttermilk 1/4 杯、无盐溶解牛油2汤匙、A蛋1粒
B:烟肉8片、 枫糖浆适量

【做法】
1.把全部材料A混合搅拌均匀,有一些粗粒亦没关系。(图1-3)
2.用不黏锅以中小火把烟肉煎至两面微焦,然后以纸巾吸干油待用。(图4)
3.以中火热不黏锅,倒入1⁄4 杯的面糊,上面放一片烟肉,煎至表面起泡泡后小心翻转,再把另一面煎至熟即可。(图5-7)
4.把煎饼盛到碟子上,烟肉面朝上,随意淋少许枫糖浆享用。(图8)

【Ingredients】
A:150g plain flour (sifted), 1 Tbsps sugar ,11⁄2 tsps baking powder, 1/2 tsps baking soda, 1/2 tsp salt, 1 1/4 cups buttermilk, 2 tbsp unsalted butter (melted), 1 large egg
B:8 slices bacon, pure maple syrup

【Method】
1.In a mixing bowl, whisk ingredients A together, with small to medium lumps remaining.(pic 1-3)
2.In a nonstick skillet, cook bacon over medium-high until fat is rendered and both side browned. Drain bacon on paper towels.(pic 4)
3.Heat skillet over medium. Pour 1⁄4-cupfuls batter into skillet and top each with a bacon slice. Cook until some bubbles appear on top of pancakes and a few have burst. Carefully flip pancakes and cook until browned on underside.(pic 5-7)
4.Transfer to a platter, bacon side up, serve with pure maple syrup if desired.(pic 8)
