焦糖南瓜布丁 Caramel Pumpkin pudding

【材料】
A:南瓜泥 200克、鸡蛋 2个、砂糖 60克、牛奶 150毫升、玉米粉 1茶匙、莱姆酒 1茶匙
B:砂糖 60克、冷水 40毫升、热水 20毫升
【做法】
1. 将材料(A)的鸡蛋打散,加入砂糖搅拌均匀,加入玉米粉拌匀后,加入牛奶搅拌均匀。(图1)
2. 然后加入南瓜泥拌匀,最后加入莱姆酒拌打均匀,备用。(图2)
3. 取一小锅,放入材料(B)的砂糖和冷水,以小火煮至焦糖色后立刻离火,加入热水搅拌至均匀,备用。(图3)
4. 准备4个耐热烤皿,倒入适量的焦糖浆,待焦糖冷却后,即可倒入南瓜糊混合料。(图4)
5. 烤箱预热180度,以蒸烤的方式,烤约30分钟至熟,待冷却后,放入雪柜冷冻2个小时,即可脱模享用。
贴心小叮咛:
1. 蒸烤 – 將烤皿置放在烤盤中,並在烤盤裡倒入冷水,才送入烤箱蒸烤。
2. 脫模 – 待布丁完全冷卻後,在食用前用刀子在烤皿周圍劃一圈,上置一個盤子,將布丁倒扣出來即可。

【Ingredients】
A:200g mashed pumpkin, 2 eggs, 60g sugar, 150ml milk, 1 tsp corn flour, 1 tsp Rum
B:60g sugar, 40ml cold water, 20ml hot water
【Method】
1. Beaten eggs of ingredients A, add in sugar, mix well before add in corn flour; and then mix in milk.(pic 1)
2. Add in mashed pumpkin, stir well and then add in Rum.(pic 2)
3. Boil sugar with cold water of ingredients B, cook in low heat until caramelized, off heat and pour in hot water immediately.(pic 3)
4. Pour the caramel into 4 ramekins, once cool down, pour in mashed
pumpkin mixture.(pic 4)
5. Bain-Marie in pre-heated oven at 180℃ for 30 minutes or until cooked. Let cool down and keep in fridge for 2 hours before dislodge on dessert plate.
Tips:
1. Bain-Marie: Place ramekins into a dish filled half-full with water, and then bake it means Bain-Marie.
2. Dislodge: Wait for the pudding to cool down totally, use sharp knife circle around the edge side of ramekin’s, and then top with a plate to dislodge it.
