猪尾凤爪焖栗子Braised Pig tail & Chicken Feet

【材料】
猪尾巴1条、鸡脚4根、栗子10粒、红枣8粒、竹蔗1节、姜2片

【调味料】
生抽2汤匙、冰糖1茶匙、绍兴酒1茶匙、盐少许、老抽少许、味精少许

【做法】
1.将猪尾剁4段,鸡脚剁去脚尖再斩半,以沸水川烫过,洗净。(图1)
2.栗子泡软,用叉子挑除硬皮;竹蔗去皮剁小块,红枣洗净备用。
3.锅内烧热1汤匙油爆姜片,跟着放入猪尾巴、鸡脚和生抽炒香。(图2-4)
4.加入栗子、红枣、竹蔗和注入清水(以掩盖过材料为准),煮滚后盖上,转小火继续焖煮约35分钟至软。(图5-6)
5.加入剩余调味料兜匀便可。

【Ingredients】
1 pig tail, 4 chicken feet, 10pcs chestnut, 8 red dates, 1 section of bamboo sugar cane, 2 slices ginger

【Seasoning】
2 tbsp soy sauce, 1 tsp rock sugar, 1 tsp Chinese cooking wine, dash of salt, drops of dark soy sauce, dash of MSG

【Method】
1.Cut pig tail into 4 sections; chop off chicken feet’s nail and cut into two. Blanch in boiling water and wash.(pic 1)
2.Soak chestnut and remove the skin; peel sugar cane and cut into small pieces; wash red dates.
3.Heat 1 tbsp oil in wok, sauté ginger until fragrant, add in pig tail, chicken feet and soy sauce, stir-fry until fragrant.(pic 2-4)
4.Add in chestnut, red dates, sugar cane and pour in water to cover all ingredients; bring to boil, cover with lid and simmer in low heat for about 35 minutes or until soften.(pic 5-6)
5.Add in the rest of seasoning and adjust the taste, done.
