猪油渣花生拌江鱼仔 Pickles of Pork Lard, Peanuts & Anchovies

材料 :
江鱼仔100克、花生炒香50克(去衣)、红辣椒1条(切片)、猪油渣2汤匙、青指天椒2条(切碎)、猪油2汤匙
调味料:
糖2茶匙、生抽2汤匙
做法 :
1. 花生炒香去衣;江鱼仔洗净吸干水分,以油炸至香脆备用。(图1-3)
2. 把猪油和猪油渣、红辣椒、江鱼仔及调味料一同拌炒。(图4-7)
3. 熄火后加入花生兜匀即可。(图8)

INGREDIENTS :
100g Anchovy, 50g toasted peanut (skinned), 1 red
chili (sliced), 2 tbsp crispy pork lard, 2 green chili
padi 9chopped), 2 tbsp pork oil
SEASONING
2 tsp sugar, 2 tbsp soy sauce
METHOD :
1. Toasted peanut and skinned; wash and dry anchovy, and then deep fry until crispy, drain. (pic 1-3)
2. Heat up pork oil and add in crispy pork lard, red chili, anchovy and seasoning, stir-fry until well mixed. (pic 4-7)
3. Off heat and toss in toasted peanuts, done. (pic 8)
