猪油渣饭 Claypot Lard rice

材料:
黑毛猪的猪油1片、葱花适量、饭4碗
酱汁:混合
蚝油1汤匙、酱油1汤匙、黑酱油½汤匙、味精½茶匙、糖1茶匙、
鸡精粉½茶匙、麻油½汤匙、姜汁少许
做法:
1 猪油切丁,以沸水川烫好滤干,放入锅里加少许盐爆至香脆。
2 捞起再浸到冷油,使之变得更香脆。
3 在小碗内将酱材料混合捞匀备用。
3 瓦煲内以小火爆香猪油渣至香脆,捞起备用。(图1-2)
4 同样瓦煲加入饭炒香,淋入酱汁,继续炒至焦香。(图3-4)
5 最后撒上葱花和猪油渣即可享用。(图5)

INGREDIENTS
1 piece black pig’s lard, some chopped green onion, 4
bowls fragrant rice
SAUCE (mix well)
1 tbsp oyster sauce, 1 tbsp soy sauce, ½ tbsp black
soy sauce, ½ tsp MSG, 1 tsp sugar, ½ tsp chicken stock
powder, ½ tbsp of sesame oil, some ginger water,
METHOD
1 Cut the lard, blanch in boiling water, drain and mix
with some salt, fry till crispy.
2 Dish out and dip into cold oil to make it crispy.
3 In a small bowl, mix together the soy sauces, set
aside.
3 Deep fry the lard in the claypot, dish out and set
aside. (pic 1-2)
4 Use the same claypot, add in rice and saute till
fragrant, pour the sauce evenly over the rice, continue
fry until a bit burn. (pic 3-4)
5 Finally, sprinkle with chopped green onion and crispy
lard when serve.
