猪脚冻 Cold Trotter

[材料]

猪手半只、猪皮250克、鸡脚8只、姜3片

[调味料]

鱼露2汤匙、冰糖1汤匙、味精少许

[做法]

1.猪手斩件川烫沸水洗净,猪皮、鸡脚洗净。

2.烧滚4杯清水放入猪手、猪皮、鸡脚、姜片及调味料煮滚后,转小火继续焖煮至猪手软。

3.弃去姜、猪皮及鸡脚,取出猪手去骨,然后放回原煲内煮至汤剩一半。

4.把汤连同猪手及汤倒入模型内待冷却凝固,移入雪柜冷冻后便可切片进食。

Ingredients:

1/2 portion of pig trotter, 250g pig skin, 6 pcs chicken feet, 3 slices ginger

Seasoning:

2 tbsp fish sauce, 1 tbsp rock sugar, dash of MSG

Method:

  1. Chop trotter into bite size and then blanch in boiling water, wash; wash pig skin and chicken feet.
  2. Boil 4 cups of water with ginger and seasoning, and then add in all main ingredients and simmer until trotter is softened.
  3. Remove ginger, pig skin and chicken feet; and then take out trotter, debone and back to pot and continue cooking until the soup reduced by half.
  4. Shift soup and trotter into a mold, and then keep in fridge until settled in solid form, then only slice to serve..
