玉米面包Corn Bread

【材料】
A:高筋面粉270克、玉米粉30克、罐头玉米羹90克、白糖6克、盐4克、奶粉8克、酵母4克、面包增发剂4克
B:清水120克、牛油10克、玉米粉50克(涂面用)

【做法】
1.把所有材料A混合在搅拌器里。(图1)
2.以慢速搅拌,并逐渐加入清水。
3.搅拌成粗面团后,加入牛油。(图2)
4.继续搅拌成滑面团。覆盖面团,让它醒30分钟。
5.用拳头压面团挤出空气,分成两份,然后把面团杆平。(图3)
6.把面团卷起成条状后以水喷湿表面,然后沾上玉米粉。(图4-6)
7.把面团放在烤盘上,以保鲜膜覆盖,让它再醒30-45分钟。 (图7)
8.放入预热至190℃的烤炉里,喷水以产生水气,然后烤15-20分钟或至金黄色即可。(图8)

【Ingredients】
A:270g bread flour, 30g polenta/corn meal, 90g cream styled corn, 6g sugar, 4g salt, 8g milk powder, 4g yeast , 4g bread imporver
B:120g water, 10g butter,50g corn meal(for dipping)

【Method】
1.Put all the ingredients A into a mixing bowl. (pic 1)
2.Using a dough hook, mix with low speed and slowly pour in water. 3.Once a rough dough is form, add in the butter.(pic 2)
4.Knead until a smooth dough is formed. (Test by stretching small batch until a thin layer).Rest the dough covered for 30 minutes.
5.Punch back the dough and divide into half.(pic 3)
6.Shape the dough and spray with water before dipping with yellow corn meal.(pic 4-6)
7.Put the dough on tray, cover with cling film or damp cloth and rest for another 30 to 45 minutes.(pic 7)
8.Bake at 190°c and spray water to create steam. Bake for 15 to 20 minutes or until golden brown.(pic 8)
