甘香炒啦啦Stir Fried Spicy La La

【材料A】
啦啦400克、咖哩叶2束

【材料B】
虾米35克(泡软)、姜15克、蒜头3瓣、小葱头8粒、指天椒12条、香茅1支

【调味料】
咖哩粉1汤匙、黄姜粉1/2茶匙、蚝油1汤匙、糖1茶匙、生抽1/2汤匙、马来煎粉1/2茶匙

【做法】
1.将全部材料B剁细。(图1)
2.啦啦浸入盐水中,使其吐沙,洗净沥干,备用。
3.烧热3汤匙油爆香材料B,加入咖哩叶及调味料炒香。(图2-3)
4.倒入啦啦拌炒并洒入少许水炒至啦啦壳打开即熟,趁热享用。(图4-6)

【INGREDIENTS A】
400g La La (clams), 2 stalks curry leaves

【INGREDIENTS B】
35g dried shrimp (soaked), 15g ginger, 3 pips garlic, 8 shallot, 12 chili padi, 1 stalk serai

【SEASONING】
1 tbsp curry powder, 1/2 tsp turmeric powder, 1 tbsp oyster sauce, 1 tsp sugar, 1/2 tbsp sauce, 1/2 tsp balacan power

【METHOD】
1.Chopped all ingredients B. (pic 1)
2.Soak La La in salt water to clean the sand, then wash and drain.
3.Saute ingredients B with 3 tbsp oil until fragrant, and then toss in curry leaves and seasoning.
4.Add in La La plus some water, stir-fry until the shells opened, dish out.
