甘香苏东Kam Heong Squid

【材料】
苏东3只(切圈)、小红葱4粒(切片)、蒜头4瓣(剁碎)、虾米30克(剁碎)、咖哩叶30片、小辣椒5條(剁碎)

【调味料】
蚝油1汤匙、生抽1茶匙、咖哩粉1汤匙、糖少许

【做法】
1.将苏东放入滚水中烫熟,沥干水分。(图1)
2.热锅和1汤匙油,爆香小红葱、蒜茸和虾米,再加入咖哩叶和小辣椒炒香。(图2)
3.加入调味料和苏东炒匀,即可上碟享用。(图3-4)

【Ingredients】
3 pcs squids (cut rings), 4 shallot (sliced), 4 pips garlic (chopped), 30g dried shrimp (chopped), 30 sprigs curry leaves, 5 chili padi (chopped)

【Seasoning】
1 tbsp oyster sauce, 1 tsp soy sauce, 1 tbsp curry powder, dash of sugar

【Method】
1.Blanch squids in boiling water until cooked; drain. (pic 1)
2.Heat some oil in wok, sauté shallot, garlic and dried shrimp until fragrant and golden brown, toss in curry leaves and chili padi; stir-fry until aromatic. (pic 2)
3.Add in squids and seasoning, stir to mix and dish out. (pic 3-4)
