番茄炒饭炸鸡便当 Tomato Fried Rice and Chicken Bento

【番茄炒饭材料】
冷白饭1碗、番茄1粒、鸡蛋1粒(打散)、青葱粒2汤匙

【调味料】
番茄酱1汤匙、鸡精粉1/2茶匙、盐1/2茶匙、胡椒粉少许

【做法】
1.将番茄底部用刀在表皮划十字,入沸水中汆烫1分钟,取出去皮,切开4
瓣并去籽再切成丁备用。(图1)
2.把镬烧热1汤匙油,倒入蛋液炒成蛋花盛起。(图2)
3.再倒入2汤匙油烧热,先入青葱白爆香,再加入番茄丁拌匀。(图3)
4.随即入白饭及调味料炒至松散,接着加入蛋花、青葱拌炒匀匀即可。(

【炸鸡小腿材料】
鸡小腿3只(鸡翼上段)、鸡蛋液

【配料】

生菜、樱桃番茄各适量

【腌料】
A:盐1/4茶匙、糖1茶匙、胡椒粉少许
B:面粉1汤匙、粟粉1汤匙(混合)

【鸡小腿做法】
1.将鸡小腿用小刀从关节部位刮松,把尖部的肉往下堆聚成一团,加入A料
腌置1/2小时。(图6)
2.将鸡小腿沾上蛋液,并沾上B干粉,放入热油中炸至金黄色,捞起沥油,
跟番茄炒饭及樱桃番茄,同摆入餐盘中。(图7-8)

【Ingredients】
1 bowl cold white rice, 1 tomato, 1 egg (beaten), 2 tbsp chopped spring
onion【Seasoning】1 tbsp tomato sauce, 1/2 tsp chicken powder, 1/2 tsp
salt, dash of pepper

【Method for Fried Rice】
1.Cross cut the surface of tomato and boil in boiling water for 1 minute, peel
the skin, seeded and then diced.(pic 1)
2.Heat 1 tbsp oil in wok, fry egg into omelette, dish out.(pic 2)
3.Heat up another 2 tbsp of oil, sauté white part of spring onion until fragrant,
toss in tomato cubes.(pic 3)
4.Add in white rice and seasonings, stir-fry until loosen, toss in egg omelette
and spring onion, done.(pic 4-5)

【Boxing Chicken Ingredients】
3 chicken wing drumlet, 1 egg (beaten)

【Sub Ingredients】

Some lettuce and cherry tomato

【Seasoning】
A:1/4 tsp salt, 1 tsp sugar, dash of pepper
B:1 tbsp plain flour, 1 tbsp corn flour(combined)

【Method for Boxing Chicken】
1.Use sharp knife to trim the chicken wing drumlet from top to the bottom and
flip it over, then marinate with mari-nades A for 1/2 hour.(pic 6)
2.Coat chicken with egg sauce, follow with flour mixture B, deep fry until
golden brown. Drain boxing chicken and ar-range in lunch box with tomato
egg fried rice and cherry tomatoes.(pic 7-8)
