番薯蚝豉干贝焖饭Sweet Potato Rice with Dried Oyster & Scallop Rice

【材料】
白米1杯(洗净滴干)、番薯200克(切丁)、食油2汤匙、葱头1粒(剁碎)、蒜头2瓣(剁碎)、虾米2汤匙(浸泡洗净)、鸡/猪肉130克(切丁,以2茶匙蚝油腌妥)、大蚝干6粒、鸡高汤250毫升、罐头蚕豆1/2罐

【调味料】
盐、胡椒粉及鸡粉各1/2茶匙

【做法】
1. 起锅热油,把葱头,蒜头及虾米爆香,然后加入鸡肉,炒熟后加入番薯。(图1-3)
2. 加入白米及调味料,炒1-2分钟后移到电饭煲里,并加入珍珠鲍。(图4-5)
3. 加入鸡高汤,搅拌均匀后试味,然后开电把饭煮熟。(图6-7)
4. 饭煮至一半时加入蚕豆,再搅拌,然后继续煮饭。(图8)
5. 饭煮好后不要开盖,焖10分钟后才开来吃。

【Ingredients】
1 cup rice (washed and drained), 200 g sweet potato (peeled and cubed 1cm), 2 Tbsps cooking oil, 1 shallot (chopped), 2 cloves garlic (chopped), 2 Tbsps dried prawns (washed & drained), 130 g Chicken/ pork meat (cubed and marinate with 2 tsp oyster sauce), 6 pcs large dried oysters, 250 ml chicken broth, 1/2 can medammas (drained)

【Seasonings】
1/2 tsp salt or to taste, 1/2 tsp ground white pepper, 1/2 tsp chicken stock granules

【Method】
1. Heat oil in wok, lightly brown shallots, garlic, dried shrimps and dried oysters until fragrant. Add chicken and stir-fry until meat changes colour, adding in the sweet potato cubes. (pic 1-3)
2. Put in rice and seasonings. Toss for 1 or 2 minutes then transfer all the ingredients to a rice cooker with the pacific clams.(pic 4-5)
3. Pour in chicken stock, adjusting salt to taste; cover lid of rice cooker and cook rice until done.(pic 6-7)
4. Half way through cooking toss in half a can of the medam-mas, give the rice a stir and close lid to continue cooking the rice until the cooker button pops up.(pic 8)
5. Allow the rice to stand for 10 minutes before dishing out to serve.
