百鸟朝凤(黄酒鸡)Rice Wine Chicken

【材料】
全鸡1只、姜丝1⁄2饭碗、蒜茸1汤匙、黄酒1支(约700-800毫升)、麻油2汤匙、冬菇8至10朵、清水1杯

【调味料】
盐1 1⁄2茶匙、糖1⁄2汤匙

【做法】
1.全鸡洗净,斩小块。冬菇浸水至软,切块。
2.麻油入锅烧热,爆香姜丝,小火炒至微黄后,加入蒜蓉一同爆至金黄色。(图1)
3.加入冬菇炒约30秒,倒入鸡块拌炒均匀。(图2-3)
4.倒入清水一杯煮滚后,加盖焖15至20分钟至鸡肉熟。(图4-5)
5.注入黄酒煮滚后再慢火煮5分钟,以盐和糖调味。熄火前可加入额外酒以增加酒气。(图6)

【Ingredients】
1 chicken, 1⁄2 bowl shredded ginger (rice-bowl), 1 tbsp minced garlic, 1 bottle yellow rice wine (approx. 700ml to 800ml), 2 tbsp sesame oil, 8 to 10 nos Chinese mushroom, 1 bowl water

【Seasoning】
1 1⁄2 tsp salt, 1⁄2 tbsp sugar

【Method】
1.Wash the chicken and chop into chunks. Soak Chinese mushroom until soft and cut into pieces.
2.Heat up sesame oil in a wok. Saute shredded ginger over low heat until fragrant, add in chopped garlic, continue saute till golden brown. (pic 1)
3.Add Chinese mushroom and stir-fry for 30 seconds. Add chicken chunks to stir-fry. (pic 2-3)
4.Pour in 1 bowl water, cover to braise for 15 to 20 minutes until the chicken is cooked. (pic 4-5)
5.Pour in rice wine, bring to boil for another 5 minutes, season with salt and sugar to taste. May add more wine if desire before turn off heat. (pic 6)
