糖醋荔枝球Sweet & Sour Lychee Balls

【材料】
荔枝1罐、猪肉碎100克、马蹄2粒(切碎)、青甜椒20克、红甜椒20克、黄甜椒20克

【腌料】
粟粉1茶匙、麻油少许、盐少许

【糖醋汁】
辣椒酱2汤匙、酸梅酱2汤匙、H&P酱1/2汤匙、番茄酱2汤匙、白醋1/2汤匙、糖1/2汤匙、盐少许、荔枝糖水1/2碗、粟粉水适量(勾芡)

【做法】
1.将猪肉碎加入调味拌匀,再加入马蹄碎搅拌成馅料,然后分成小粒。(图1-2)
2.荔枝沥干水份,每粒塞入肉碎馅填满,然后以中火蒸10分钟至熟。(图3-4)
3.将三色甜椒都切成丁,以少许油稍微炒香,然后倒入糖醋汁煮滚。(图5-7)
4.加入巳蒸熟的荔枝球及少许粟粉水勾芡便可。(图8)

【Ingredients】
1 can canned lychee, 100g minced meat, 2 pcs water chestnut (chopped), 20g each of red, green & yellow capsicum(diced)

【Condiments】
1 tsp corn flour, dash of salt and sesame oil

【Sauce】
2 tbsp chili sauce, 2 tbsp plum sauce, 1/2 tbsp HP sauce, 2 tbsp tomato sauce, 1/2 tbsp vine- gar, 1/2 tbsp sugar, dash of salt, 2Y bowl syrup from canned lychee, some starch for thickening

【Method】
1.Marinate minced meat with condiments and then mix in chopped water chestnut and make into small balls.(pic 1-2)
2.Drain lychee and stuff in filling; and then steam for 10 minutes.(pic 3-4)
3.Stir fry diced capsicum with some oil and then add in sauce ingredients and bring to boil.(pic 5-7)
4.Add in steamed stuffed lychee and thicken with starch.(pic 8)
