糖醋鱼虾蟹Sweet & Sour Seafood

【材料】
肉蟹1只、明虾6只、石斑鱼肉120克、蒜茸1汤匙、粟粉3汤匙

【配料】
大葱1粒、番茄1粒、红辣椒1条、甜青椒1/2粒(全部切角)

【腌料】
鸡蛋1粒、盐1/2茶匙、胡椒粉少许

【糖醋酱料】
番茄酱5汤匙、辣椒酱2汤匙、酸梅酱2汤匙、酱油1汤匙、糖1汤匙、白醋1汤匙、盐少许、味精1/2茶匙、水1/2碗

【做法】
1.蟹刷洗清净,揭开斗盖,清除内脏洗净,再切开4边;明虾修剪;鱼肉切块。(图1-2)
2.将已处理好的海鲜,加入腌料捞匀,再裹上粟粉,放入热油中炸熟及脆捞出沥油。(图3-4)
3.镬中留少许油,爆香蒜蓉茸,放入配料及糖醋酱料煮滚后,将上述炸香海鲜回锅兜匀便可上碟。(图5-6)

【Ingredients】
1 crab, 6 prawns, 120g Garoupa fillet, 1 tbsp chopped garlic, 3 tbsp corn flour

【Sub-Ingredients】
1 each of onion, tomato, red chili and 1/2 green capsicum (all cut wedges)

【Condiments】
1 egg,1/2 tsp salt, dash of pepper

【Sweet and sour sauce】
5 tbsp tomato sauce, 2 tbsp chili sauce, 2 tbsp plum sauce, 1 tbsp soy sauce, 1 tbsp sugar, 1 tbsp vinegar, dash of salt, 1/2 tsp MSG, 1/2 bowl water

【Method】
1.Wash and devein crab, cut into 4 pieces; trim prawns and cut fish into slices.(pic 1-2)
2.Marinate seafood with condiments and then coat with corn flour, deep fry in hot oil until crispy, drain.(pic 3-4)
3.Heat 1 tbsp oil in wok, saute garlic till fragrant, add sub-ingredients with sauce ingredients till boil, return the fried seafood in sauce and stir to mix, done.(pic 5-6)
