泰式咖喱鱼块 Thai Curry Fish

材料
腐竹鱼500克、红辣椒1只、青辣椒1只、西芹叶100克、奶水100克、清水150克、九层塔叶20片、疯柑叶2片(切丝)
500g mock fish, 1 red chili, 1 green chili, 100g celery, 100ml milk, 150ml water, 20 sprigs basil leaf, 2 sprigs kaffir lime leaf (juliennes)

调味料
Seri-Aji多用途咖喱粉2小匙、素蚝油1小匙、生抽1小匙、黑胡椒粉1小匙
2 tsp Seri-Aji multi-purpose curry powder, 1 tsp vegetarian oyster sauce, 1 tsp soy sauce, 1 tsp black pepper

做法
1.把素腐竹鱼先略炸香,沥油待用。(图1)
1.Deep fry mock fish until fragrant, drain.(pic 1)

2.将红、青辣椒、西芹叶切粗条。
2.Cut red & green chili and celery into coarse strips.

3.烧热1汤匙油,加入红、青辣椒、西芹条一起炒香,加入调味料、奶水、清水、素鱼一起煮至滚,再加入九层塔和疯柑叶拌匀即可上碟享用。(图2-5)
3.Heat 1 tbsp oil in wok, sauté both chilies and celery until fragrant, toss in seasoning, milk, water and mock fish, bring to boil; and then add in basil leaf and kaffir lime leaf, dish out.(pic 2-5)
