酱爆豆腐 Fragrant Tofu

材料
A:豆腐2块(一块切成6小块)
A:2 blocks tofu (each cut into 6)

B:甜菜蒲碎20克、姜茸1⁄2茶匙
B:20g chopped pickled sweet radish, 1⁄2 tsp chopped ginger

C:灯笼青椒1⁄4粒、灯笼黄椒1⁄4粒、灯笼红椒1⁄4粒(全切丁)、素肉碎100克、小辣椒2条(拍扁)
C:1⁄2 each of green, yellow & red capsicum(diced all), 100g mock minced meat, 2 chili padi(bruised)

调味料
酱油1茶匙、黑酱油1茶匙、调味素1⁄2茶匙、盐1⁄2茶匙、糖1⁄2茶匙、番茄酱2汤匙、辣椒酱1汤匙、清水2汤匙
1 tsp soy sauce, 1 tsp dark soy sauce, 1⁄2 tsp salt, 1⁄2 tsp vegetarian stock granule, 1⁄2 tsp sugar, 2 tbsp tomato sauce, 1 tbsp chilli sauce, 2 tbsp water

勾芡
粟粉水适量
Some corn starch

做法
1.烧热1⁄2锅油,用大火把豆腐炸至金黄色捞起,摆盘。(图1-2)
1.Deep fry tofu in hot oil until golden brown. Dish out and arrange on plate. (pic 1-2)

2.镬中留1汤匙油,加入材料B炒香,然后放入材料C拌炒均匀。(图3)
2.Keep 1 tbsp oil in wok, saute ingredients B until fragrant, toss in ingredients C and stir to mix.(pic 3)

3.放入调味料煮滚,勾芡后即可淋在豆腐上,趁热上桌。(图4-6)
3.Add in seasoning, bring to boil, thicken and pour over fried tofu, serve immediately. (pic 4-6)
