紫菜芋丝卷Seaweed Yam Roll

【材料】
豆腐皮6张(每张9.5″x8.5″)、紫菜3张(每张7.5″x8″)

【馅料】
芋头丝200克(炸熟)、素瘦片100克(切丝)、芫荽25克(切碎)、红萝卜60克(切丝、飞水)

【调味料】
盐1/4茶匙、糖1/2茶匙、五香粉少许

【面糊】
面粉、水各适量

【炸脆浆(混合拌匀)】
粘米粉1大匙、面粉3大匙、粟粉1大匙、发粉1茶匙、水4大匙、油1大匙、盐少许

【装饰】
炸粉丝少许

【做法】
1.烧热适量的油爆香素瘦片丝,加入所有材料和调味料炒香盛起,备用。
2.将1片9.5″x8.5″腐皮,抹上适量面糊,放上一片紫菜,摆上适量馅料,再盖上一片腐皮,然后卷起,用面糊封口。
3.隔水蒸5分钟,待冷沾上脆浆,炸至金黄色,切段上碟趁热享用。

【Ingredients】
6pcs bean curd sheet(9.5X8.5 inches), 3 sheets seaweed (7.5 X 8 inches)

【Filling】
200g shredded yam(deep fried), 100g mock lean meat(shredded), 25g coriander(chopped), 60g carrot(shredded & blanched)

【Seasoning】
1/4tsp salt, 1/2tsp sugar, dash of 5 spiced powder

【Batter】
Some plain flour and water

【Deep fry batter (mix well)】
1tbsp rice flour, 3tbsp plain flour, 1tbsp corn flour, 1tsp baking powder, 4tbsp water, 1tbsp oil, dash of salt

【Garnishing】
Deep fried glass-noodles

【Method】
1.Sauté mock lean meat with some oil until fragrant, then add in all ingredients and seasoning, stir fry untIl fragrant.
2.Spread some batter on top of the 9.5″ x8.5″ bean curd sheet, and then cover with 1 sheet of sea- weed, top with some filling and cover with another sheet of bean curd sheet; roll up and seal with batter.
3.Steam the roll for 5 minutes, let cool down and coat with deep fry batter, deep fry until golden brown. Chop into blocks and serve hot.
