红豆芋圆烧仙草Hot Cincao with sweet potatoes, yam & red beans

【烧仙草材料】
清水200毫升、白糖200克、仙草500克(刨丝)

熟黑珍珠粉圆1/2 杯、橙色紫色番薯各1粒(蒸熟去皮切丁)、芋头1粒(去皮切丁)、红豆100克(洗净浸泡至少1小时)、清水200毫升、班兰叶2片(打结)、白糖30克、淡奶、刨冰、糖浆

【做法】
1.把糖加水煮至溶解。
2.加入刨丝仙草,煮至滚而起泡。
3.熄火,让仙草浸泡在里面,它会凝结一起。
4.把切丁芋头蒸熟,置放一旁。
5.把浸泡过的红豆和班兰叶一起煮至软。
6.加入白糖,煮至干水即可。

【吃法】
7.把刨冰装碗。
8.依次放入番薯芋圆,芋头芋圆,仙草,红豆沙及黑珍珠。
9.淋上淡奶和糖浆即可。

【Hot cincao Ingredients】
200ml water, 200g sugar, 500g cincao(grated)

½ Cup cooked black pearls, 1 orange sweet potato(steamed, peeled & cubed), 1 purple sweet potato(steamed, peeled & cubed), 1 yam(peeled & cubed), 100g red beans(washed & soaked for 1 hour), 200 ml water, 2 knotted pandan leaves, 30g sugar, evaporated milk, shaved ice, sugar syrup

【Method】
1.Bring water & sugar to a boil until sugar dissolves.
2.Add grated cincao & stir until mixture bubbles and comes to a boil.
3.Turn off heat & leave the hot cincao in the pot. It will all set and stick together.
4.Steam the yam until tender, set aside.
5.Boil soaked red beans with pandan leaves until tender.
6.Add in sugar and simmer until dry. Set beans aside.

【To serve】
7.Shave ice into a serving bowl.
8.Top with cubed sweet potatoes, yam, hot cincao, red beans & black pearls.
9.Pour creamer over & pour sugar syrup to taste.
