红酒三菇鸡Braised Mushroom Chicken with Red Wine

【调味料】
红酒3大匙、盐1/2茶匙、麻油1/2茶匙、酱油1/2茶匙、糖1/2茶匙、油少许

【材料】
1.锅内热少许油,放入姜丝炒至金黄色香后捞起待用。(图1)
2.在原来的锅内再加入些许麻油,放入鸡肉块一同翻炒至半熟,加入盐、糖、酱油调味。(图2)
3.加入少许水后再放入3大匙红酒,加盖焖煮10分钟,然后把香菇、蘑菇、鲍鱼菇放入一同翻炒,要起镬时再加入爆姜丝及少许葱段即可。(图3-4)

【Ingredients】
300g chicken with bone(cut bite size), 4 mushroom (soak and halved), 6 button mushroom, 6 ablone mushroom, 1 bowl shredded ginger, 1 stalk spring onion

【Seasonings】
3 tbsp chinese red wine, 1/2 tsp salt, 1/2 tsp sesame oil, 1/2 tsp soy sauce, 1/2 tsp sugar, some cooking oil

【Method】
1.Heat oil in wok, saute chopped ginger till fragrant, set aside.(pic 1)
2.Add sesame oil in the same wok, stir fry chicken till half cook, add in sugar, salt and soy sauce, mix well.(pic 2)
3.Pour in water and red wine, cover with lid and simmer for 10 minutes, add in all the remaining ingredients and fry well. Toss in ginger crisp and spring onion before dish out.(pic 3-4)
