红鱼芒果沙沙酱 Red Snapper Fillet with Mango Salsa

【材料】

红鲷鱼4片、粟米油50毫升

 

【芒果沙沙酱】

亚参60克、清水100毫升、芒果1粒(切粒)、红石榴1⁄2粒、红葱头50克(剁碎)、指天椒2条(剁碎)、少许盐及糖调味、洋芫荽2束

 

【香料饭】

米100克、鸡汤200毫升、牛油50克、小葱头80克(剁碎)、蒜2瓣(剁碎)、鲜迷迭香2束

【香料饭做法】

1.锅内热油,爆香葱、迷迭香及蒜片至香。

2.加入米炒数分钟至香。注入鸡汤及调味料,拌匀煮至滚。(图1)

3.把饭移入烤盘内,用锡箔纸包好,放入预热的烤炉内以180℃烤约30-45分钟。(图2)

【红鲷鱼做法】

将鱼洗净切大块,用少许盐及胡椒粉涂抹腌

好。然后以少许油煎熟备用。(图3)

【沙沙酱做法】

1.在一个碗内将亚参汁及清水混合,过滤去渣备后,放入平底锅内煮至滚,以少许糖及盐调味。待冷备用。

2.在一个深碗内将芒果、石榴、红葱茸及指天椒粒捞匀,加入亚参汁搅拌好。(图4)

3.将饭盛碟,拌鱼片及水果沙沙酱一起享用。

【Ingredients】

4 portion red snapper, 50ml corn oil

【Mango and Tamarind Salsa】

60g tamarind, 100ml water, 1no mango fruit(dice), 1⁄2 no Pomegranate, 50g red onion(small dice), 2nos chili padi (chopped), salt and sugar to taste, 2 sprig coriander leaf

【Pilaf Rice】

100g rice, 200ml chicken stock, 50g butter, 80g shallot (dice), 2 clove garlic(chopped), 2 sprig fresh oregano

【To Prepare Pilaf Rice】

1.Saut? onion, oregano and garlic with butter in a large sauce pan.

2.Add in rice, cooked for a few minutes until aromatic.Pour in chicken stock, stir consistently until boiled. Seasoned to taste. (pic 1)

3.Transfer to baking dish and cover with lid/foil; baked in oven at 180℃ for 30-45minutes. Keep warm.(pic 2)

【To Prepare Snapper】

Fillet and portion cut the red snapper, marinate with salt

and pepper. Pan fried till golden. (pic 3)

【To Prepare the Salsa】

1.Combine tamarind and water in a mixing bowl, strain and keep the juice. Bring to boil and correct seasoning with sugar and salt. allow cooling.

2.In a big bowl, mix mango cubes, pomegranate, red onion dice and chopped chili padi, add in tamarind juice and mix well.(pic 4)

3.Served the baked rice with red snapper and fruit salsa.
