红鱼香嫩照满室 Braised Red Snapper

[材料]

红枣鱼1条(约500克)、荷兰豆10条、红辣椒1条(切片)、酸菜40克(切丝)、嫩姜1小块、上汤500毫升

腌料:

粟粉和胡椒粉少许、生抽2汤匙

[调味料]

豆瓣酱1 1/2汤匙、味精1/2茶匙、糖1茶匙、胡椒粉少许

[做法]

1.鱼洗净,用2汤匙生抽,少许胡椒粉及粟粉拌匀腌10分钟,然后以热油炸至金黄色待用。

2.留油少许爆香嫩姜和豆瓣酱跟着加入其余的材料及调味料煮滚。

3.放入鱼焖煮片刻至入味便可上碟。

Ingredients:

1 red snapper (about 500g), 10 pcs snow pea, 1 red chili (sliced), 40g pickled mustard (juliennes), 1 piece young ginger, 500ml stock

Marinate Ingredients:

Dash of corn flour & pepper, 2 tbsp soy sauce

Seasoning:

1 1/2 tbs[ soy bean paste, 1/2 tsp MSG, 1 tsp sugar, dash of pepper

Method:

  1. Wash fish and then marinate with 2 tbsp soy sauce, dash of pepper and corn flour for 10 minutes, and the deep fry until golden brown.
  2. Keep some oil in wok, sauté ginger and soy bean paste until fragrant, and then toss in all other ingredients and seasoning, bring to boil.
  3. Add in fish and simmer until flavor infused, dish out.
