翡翠满堂Bouncy Meat Balls With Jade Green Egg Soup

【材料】
丝瓜350克(去皮滚刀切)、菜园鸡蛋3粒、盐1茶匙、鸡粉1茶匙、清水1公升

【配料】
鸡胸肉碎150克、虾胶120克、蒜茸1茶匙、菜园鸡蛋白1个、生粉1-2汤匙

【调味料】
酱油1茶匙、胡椒粉½茶匙、麻油1茶匙、白糖适量

【做法】
1. 将鸡胸肉碎和虾胶混合。(图1)
2. 加入蒜茸、菜园鸡蛋白,调味料及生粉,搅拌至起胶。(图2)
3. 搓成肉丸后置放一旁。(图3)
4. 煮1公升水,把肉丸烫熟。(图4)
5. 加入丝瓜,煮一会后加入盐及鸡粉调味。(图5)
6. 另外煮滚一锅水后转小火,加入3粒鸡蛋,然后熄火加盖,计时5分钟后以冰水浸泡鸡蛋至少20分钟后才剥壳。(图6)
7. 取少许丝瓜和一粒肉丸排入碟子。把溏心鸡蛋剖开排碟。撒入少许红辣椒粒和酱油,配汤吃。(图7-8)

【Ingredients】
350g angled luffa(peeled and cut into wedges), 3 Kampung Eggs, 1 tsp salt,1 tsp chicken stock granules, 1 litre water

【Sub-Ingredients】
150g Minced Chicken Breast Meat, 120g prawns paste, 1 tsp chopped garlic, 1 tbsp Kampung Egg White, 1-2 tbsp corn flour

【Seasoning】
1 tsp light soy sauce, ½ tsp pepper, 1 tsp sesame oilAdequate sugar to taste

【Method】
1. Combine minced Breast Meat and prawns paste. (pic 1)
2. Add in minced garlic, Kampung Egg White, seasoning followed by corn flour. Stir mixture until it turns sticky. (pic 2)
3. Make meat balls and set aside. (pic 3)
4. Bring 1 litre water to a boil in a pot. Put in the prepared meat balls and cook briefly. (pic 4)
5. Add angled luffa into the soup and adjust with salt, chicken stock granules and pepper to taste. (pic 5)
6. Boil a pot of water, then lower it to a rapid simmer, add in all 3 eggs to the pot, off heat and cover with lid; timing for five minutes to get a soft boiled egg with runny yolk. Then soak in ice-cold water for at least 20 minutes before shell off.
7. Put some angled luffa and a piece of meat ball on a serving plate. Cut soft boiled eggs half and place on top of plate.Add a little chopped red chili and light soy sauce over and serve with a bowl of soup.(pic 7-8)
