腊味炒臭豆Stir-fried Waxed Meat with Petai

【材料】
腊肠2条、腊肉80克(蒸熟切小段)、臭豆120克(开边)、大葱1粒(切角)、指天椒6条(拍扁)、蒜茸1/2汤匙、青辣椒1条(切角)

【调味料】
H&P 酱1/2汤匙、L&P 酱1汤匙、蚝油1茶匙、糖1茶匙

【做法】
1.腊肠及腊肉蒸10-15分钟,取出切小段。(图1)
2.臭豆开边过油、捞出沥油,把多余油盛起,留半汤匙在锅内。(图2-3)
3.下蒜茸及大葱炒香,加入腊肠、腊肉炒至出油。(图4-5)
4.放入臭豆及调味料,拌炒均匀即可。(图6)

【Ingredients】
2 Chinese sausages, 80g waxed meat, 120g petai halved), 1 onion (cut wedges), 6 chili padi (smashed), 1/2 tbsp chopped garlic, 1 green chili 9cut wedges)

【Seasoning】
1/2 tbsp H&P sauce, 1 tbsp L&P sauce, 1 tsp oyster sauce, 1 tsp sugar

【Method】
1.Steam Chinese sausage and waxed meat for 10-15 minutes, cut into small pieces. (pic 1)
2.Blanch petai in hot oil, drain. Remove oil, remaining 1/2 tbsp in wok. (pic 2-3)
3.Add in garlic and onion, stir-fry until fragrant, toss in sausages and waxed meat, sauté until oil split.(pic 4-5)
4.Add in petai and seasoning, stir to mix and dish out.(pic 6)
