自制汉堡包Homemade Burger

【材料】
牛/猪肉碎600克、大葱1粒(剁碎)、干马郁兰香草1茶匙、法式芥末酱1茶匙、A 蛋1粒、面包糠35克、parmesan/cheddar芝士30克、盐和胡椒粉适量

【配料】
番茄2粒(切片)、青瓜1条(切片)、芝士片、生菜、汉堡面包6-8个(剖开涂牛油后烤一烤)

【酱汁】混合
美奶滋5-6汤匙、柠檬汁1汤匙、黑胡椒1/4茶匙、剁碎腌黄瓜1汤匙、芥末酱1/2汤匙

【做法】
1.把肉碎跟其他材料放入大碗中,弄湿手搅拌均匀。(图 1-3)
2.将肉团分成每个约135-150克重,搓圆再压平,体积应该和汉堡面包一样大小。收入冰箱约30分钟。
3.把不沾锅加热,倒入少许油,以小火把肉团煎至熟,翻转一次即可。(图4)

【组合】
把汉堡面包摊开,涂上美乃滋酱料,依次排入生菜、肉饼、番茄及芝士片,淋上番茄和辣椒酱,马上享用。(图5-8)

【Burger pattie】
600g mince pork or beef, 1 big onion (finely chopped), 1 tsp each dried oregano, 1 tsp Dijon mustard, 1 “Grade A” egg(beaten), 35g fresh breadcrumbs, 30g grated parmesan/cheddar cheese, salt & pepper to taste

【Sub Ingredients】
2 tomatoes(sliced), 1cucumber(sliced), cheese slices, lettuce leaves
6-8 burger buns, split & buttered,toasted

【Mayo spread】mixed
5-6 tbsps mayonnaise, 1 tbsp juice of lemon or to taste, 1/4 tsp black pepper, 1 tbsp chopped pickled gherkins, 1/2 tbsp mustard sauce

【To prepare burger patties】
1.Combine all burger pattie ingredients in a bowl, mix with damp hands. (pic 1-3)
2.Form into round patties about 135-150g each. The size of the burger pattie should be the same as the burger bun. Chill for 30 minutes.
3.Meanwhile, preheat non-stick pan, add some oil & pan fry the burger pattie over low heat until thoroughly cooked, turning over once.(pic 4)

【To assemble burger】
Lay a layer of bun, top with some mayonnaise spread, lettuce leaf, burger patties, tomato, cheese slice & chilly sauce / tomato sauce.(pic 5-8)
