芋钵酸甜鸡 Yam Basket with Sweet Sour Chicken

【芋钵材料】
芋头400克(去皮切薄片)、澄面粉50克、白油50克、盐1⁄2茶匙、五香粉1⁄2茶匙、胡椒粉1⁄4茶匙
【馅料】
Asian Meals酸甜酱1盒(2包)、蒜头2瓣(剁碎)、姜6-8片、大葱1粒(切瓣)、鸡肉300克(切丁后以1⁄4茶匙胡椒粉和盐腌妥)、青灯笼
椒1⁄2粒(切丁)、番茄1大粒(切瓣)、黄梨60克(切丁)、青瓜600克(切斜片)、清水100毫升、薯粉1茶匙+1汤匙清水(勾芡)
【芋钵做法】
1. 用TupperChefTM Inspire Stock Pot把芋头煮至熟,然后捣成泥,加入白油,调味料及澄面粉,搅拌均匀至不黏手即可。(图1)
2. 把芋头面团做成环状,高约3公分,在把芋头环放在涂油的塑胶纸上,收入冰箱1小时。(图2)
3. 在TupperChefTM Inspire Wok里放足够的油,加热至中等温度时,放入从冰箱取出的芋头环,炸至金黄色,然后取出滴干油。 (图3-4)
【馅料做法】
1. 在TupperChefTM Inspire Saucepan里烧热2汤匙油,把姜和大葱炒至香,然后放入鸡肉,炒一会后加入Asian Meals酸甜酱。(图5-7)
2. 加入清水,煮至滚后加入番茄,青灯笼椒。黄梨及青瓜,然后勾芡熄火。(图8)
3. 把馅料淋在芋头环内即可上桌。

 

【For the yam ring】
400g yam (peeled & sliced thinly), 50g wheat starch or tang mein fun, 50g shortening, 1⁄2 tsp salt or to taste, 1⁄2 tsp Chinese five-spice
powder, 1⁄4 tsp ground white pepper
【Filling Ingredients】
1 box Asian Meals Pineapple Sauce [2 sachets], 2 cloves garlic(chopped), 6-8 thin slices of ginger, 1 big onion (cut into wedges),
300g chicken meat (cubed marinated with 1⁄4 tsp ground pepper and salt), 1⁄2 green capsicum (cut into cubes), 1 large tomato (cut into
wedges), 60g pineapple (cut into cubes), 60g cucumber (cut diagonally), 100 ml water, 1 tsp tapioca flour + 1 tbsp water(for thickening)
【Method】
1. Steam the yam until cooked in the TupperChefTM Inspire Stock Pot. Mash the yam and add shortening, seasonings and wheat
starch. Mix thoroughly until mixture becomes a paste and does not stick to your hands. (pic 1)
2. Shape the yam paste into a ring approximately 3cm in height.
Place the yam ring on a greased plastic sheet, chill in the refrigerator for 1 hour. (pic 2)
3. Heat sufficient cooking oil in TupperChefTM Inspire Wok. Once oil is medium hot, remove the yam ring from the refrigerator and
deep-fry until golden brown. Remove yam ring and place onto a serving plate.(pic 3-4)
【To prepare filling】
1. Heat 2 tbsp oil in TupperChefTM Inspire Saucepan, saute ginger and big onions until fragrant. Add chicken meat saut for a while,
and pour in the Asian Meals Pineapple Sauce from the sachets. (pic 5-7)
2. Add water and bring to a boil, toss in tomatoes, capsicum, pineapple and cucumber; thicken with tapioca solution. (pic 8)
3. Dish out and pour into yam ring & serve immediately.
