【材料】
芋头300克、干香菇10朵、蘑菇10朵、香酥鸡10粒、红萝卜100克、小粟心5条、炸面筋卜10粒、青豆仁60克

【调味料】混合
五香粉1小匙、豆酱1大匙、南乳1块、糖1小匙、生抽1大匙、胡椒粉1⁄4小匙、麻油1小匙、水2碗

【芋头】
1.将芋头去皮,洗净,切大块,先放入热油锅炸至金黄色,捞出沥油。(图1)
2.红萝卜切粗块,香菇去蒂,小粟心切段。
3.烧热油2汤匙炒香调味料,加入芋头、香菇、蘑菇、香酥鸡、红萝卜,一起先焖煮至软,然后加入小粟心、炸面筋卜、青豆再煮至汁浓稠即可上碟。(图2-6)

【Ingredients】
300g yam, 10pcs dried mushroom, 10 pcs button mushroom, 10pc crispy mock chicken, 100g carrot, 5 baby corn, 10 pcs fried gluten, 60g peas

【Seosoning】combined
1 tsp 5 spiced powder, 1 tbsp soy bean paste, 1 pc red fermented bean curd, 1 tsp sugar, 1 tbsp soy sauce, 1⁄4 tsp pepper, 1 tsp sesame oil, 2 bowls water

【Method】
1. Peel yam, wash and cut into big pieces, and then deep fry until golden brown, drain.(pic 1)
2. Cut carrot into big pieces, remove stems of mushroom and cut into pieces, baby corn cut blocks.
3. Heat 2 tbsp oil in wok and sautéseasoning until fragrant. Toss in yam, mushroom, button mushroom and crispy mock chicken, simmer until soften, and then add in baby corn, deep fried gluten and peas. Cook until gravy thickens, done.(pic 2-6)
