芋香排骨 Braised Ribs with Yam

[材料]

肉排400克、芋头400克、虾米30克(浸软剁碎)、蒜头5瓣(剁碎)、青葱段少许

[腌料]

盐1/2茶匙、生抽1汤匙、胡椒粉少许、粟粉1汤匙

[调味料]

糖1/2茶匙、盐1茶匙、鸡精粉1茶匙、胡椒粉少许

[做法]

1.芋头去皮切块,放入热油中炸至表层微黄色即可捞出沥油,待用。

2.肉排斩成约3寸长度,加入腌料捞匀腌置30分钟,然后放入热油中泡一泡油,捞出沥油。

3.留油少许爆香虾米及蒜米碎至金黄色,取出待用。

4.把已泡过油的排骨放回镬中,并注入水盖过面,以中火焖煮25至30分钟。

5.加入调味料及炸香的芋头继续焖煮约10分钟至汁稍干。

6.倒入已爆香的(3)及青葱段兜匀便可。

Ingredients:

400g pork ribs, 400g yam, 30g dried shrimp (soaked & chopped), 5 pips garlic (chopped), some spring onion blocks

Condiments:

1/2 tsp salt, 1 tbsp soy sauce, dash of pepper, 1 tbsp corn flour

Seasoning:

1/2 tsp sugar, 1 tsp salt, 1 tsp chicken stock granule, dash of pepper

Method:

  1. Peel yam and cut into cubes and then deep fry until golden brown.
  2. Chop ribs into 3 inches long, marinate with condiments for 30 minutes, and then blanch in hot oil briefly, drain.
  3. Keep some oil in wok; sauté dried shrimp and garlic until golden brown, dish out.
  4. Return ribs to wok, cover with water and simmer in medium heat for 25-30 minutes.
  5. Add in seasoning and yam, continuing simmer for another 10 minutes until gravy reduced.
  6. Toss in sauté ingredients (3) and spring onion, done.
