芒果咖哩鸡 Mango Curry Chicken

咖哩料:
蒜茸1大匙
葱头仔碎2大匙
洋葱1粒(切碎)
香茅3支(拍扁)
肉类咖哩粉3大匙
黄姜粉1小匙
辣椒粉2小匙(随个人喜好可以加或减)
材料:
全腿3只或鸡½只(斩块)
马铃薯200克(切块)
红萝卜150克(切块)
水800毫升
青芒果200克(切块)
红辣椒2条(去籽切片)
浓椰浆200毫升
调味料:
盐1小匙
生抽2大匙
糖2小匙
做法:
1.用5大匙油爆香蒜茸、葱头仔碎、洋葱碎和香茅。(图❶)
2.咖哩粉,黄姜粉和辣椒粉用80毫升水调成糊状,加入炒香。(图❷)
3.加入鸡腿、马铃薯和红萝卜炒匀,加入水煮滚,加盖转小火煮25分钟。(图❸~❺)
4.加入青芒果、红辣椒和调味料煮多5分钟,加入浓椰浆,煮滚即可。(图❻~❼)

Curry Paste:
1 tbsp chopped garlic
2 tbsp chopped shallots
1 onion(chopped)
3 lemongrass (smashed)
3 tbsp curry powder for meat
1 tsp turmeric powder
2 tsp chili powder (optional)
Ingredients:
3 chicken legs/ half chicken(cut into pieces)
200g potato(cut into pieces)
150g carrots(cut into pieces)
800ml water
200g green mango(cut into pieces)
2 chili (seed removed, sliced)
200ml thick coconut milk
Seasoning:
1 tsp salt
2 tbsp soya sauce
2 tbsp sugar
Method:
1.Heat up 5 tbsp oil, stir-fry garlic, shallots, onion and lemongrass.(pic ❶)
2.Mix curry powder, turmeric powder, chili powder with water
and make into a paste, and add into the wok and continue tostir-fry. (pic ❷)
3.Add in chicken, carrots, potato and water and simmer for 25minutes. (pic ❸~❺)
4.Add in green mango, red chili, seasoning and cook for another
5 minutes, add in coconut milk and bring to boil and serve.(pic ❻~❼)
