芒果糯米芝士杯 Mango in Cheesy Glutinous Rice

【材料】
A:糯米 1杯、椰奶 1杯、砂糖 1杯、盐 1茶匙
B:奶油乳酪 250克、椰奶 1⁄2杯、砂糖 1⁄2杯
C:泰国芒果 1个(切丁)
【做法】
1. 糯米浸泡2个小时后,沥干水份,放入电饭锅蒸至熟,备用;取一小锅,将材料A中的椰奶、砂糖和盐煮至滚后离火待凉,备用。
2. 将蒸熟的糯米饭和椰浆混合均匀后,放置一旁,让糯米吸干椰浆并待至凉透。(图1)
3. 将奶油乳酪置于室温至软化,备用;将材料(B)中椰奶和砂糖煮至滚后离火待凉,备用。(图2)
4. 把全部B料混合,搅拌至细滑无颗粒,备用。
5. 取4个玻璃杯,依次序在最底层铺上椰浆糯米饭、芒果丁,最后一层是椰浆芝士糊,接着,可依照自己的喜好为芝士蛋糕杯做点缀。(图3)
6. 放入雪柜冷冻2个小时后,即可享用。

【Ingredients】
A:1 cup each of glutinous rice, coconut milk & sugar, 1 tsp salt
B:250g cream cheese, 1⁄2 cup each of coconut milk & sugar
C:1 mango (diced)
【Method】
1. Soak glutinous rice for 2 hours, drain and steam until cooked; boil the rest of ingredients A in pot until boiled; set aside.
2. Mix the steamed glutinous rice with coconut mixture and set aside, let the rice absorb the coconut milk and cooling down.(pic 1)
3. Let cream cheese soften in room temperature; boil coconut milk & sugar of ingredients B in pot until boiled; set aside.(pic 2)
4. Mixes cream cheese with boiled coconut milk and stir until smooth.
5. Take 4 glass and fill glutinous rice at the bottom layer, follow with diced mango and top with cream cheese coconut milk. May decorate according to your own likes.

6. Keep in fridge for 2 hours before serving.
