芝士百菇派Assorted Fresh Mushroom Pie

【派皮材料】
牛油250克、盐1/2茶匙、A蛋1粒、普通面粉400克、1汤匙牛奶粉

【馅料】
牛油5-6汤匙、蒜头2瓣(剁碎)、鴻喜菇、鲜蘑菇及鲜菇各1包(洗净切片)、面粉80克、牛奶250毫升、A蛋3粒、盐和胡椒粉适量

【顶料】
cheddar芝士茸80-100克、黄灯笼椒1粒(切片)、额外牛油淋面
9寸圆形高身派模

【做法】
1.用电动搅拌器把牛油和盐搅拌至发起,然后加入鸡蛋,面粉及奶粉,以手搅拌至混合即可。(图1-2)
2.把面团放在塑胶片上杆平,然后把塑胶片连派皮放在派模上。剪掉周边多余的面皮。(图3)

【馅料做法】
1.起锅热牛油,把蒜头炒香后加入所有菇类,炒至软身。(图4)
2.撒入面粉,继续炒匀,熄火盛出,拌入牛奶和蛋的混合料,再以盐和胡椒粉调味。
3.把馅料倒入派皮里,洒上一层芝士后再铺黄灯笼椒,然后再洒上一层芝士。(图5-6)
4.面层再淋上牛油,放入预热烤炉里烤45-55分钟即可。(图7)

【Pie Pastry Ingredients】
250g butter, 1/2 tsp salt, 1 “Grade A” egg, 400g plain flour + 1 Tbsp milk powder

【Filling Ingredients】
5-6 Tbsps butter, 2 cloves garlic (chopped), 1 packet fresh shimeiji mushroom, 1 packet fresh button mushroom, 1 packet fresh shitake mushroom (all wash & sliced), 80g plain flour, 250ml milk, 3“Grade A” eggs, salt & pepper to taste

【Topping Ingredients】
80-100 g grated cheddar cheese, 1 yellow capsicum (cut into slices), extra butter for dolloping on top
9“ round high fluted pie tray (greased)

【Method for Pastry】
1.Beat butter, salt in an electric beater until butter is creamy. Beat in egg then the flour and milk powder. Turn off machine and mix with hands until dough binds together.(pic 1-2)
2.Roll out into a round pastry sheet using a piece of plastic sheet and holding the plastic sheet place over the pie tray. Cut off excess pastry dough and fill up the sides where the pastry is broken or opened. Set pastry aside.(pic 3)

【To Prepare Filling】
1.Heat butter in a wok, sauté garlic until fragrant adding the fresh assorted mushrooms.(pic 4)
2.Sprinkle the flour over and stir well, remove from heat, mix in the milk and eggs, season with salt and pepper to taste.
3.Pour pie filling over the baking mould, top with a layer of cheese follow by yellow capsicum on top and layering another layer of cheese.(pic 5-6)
4.Dollop with extra butter on top and bake in pre-heated oven for 45-55 minutes, done.(pic 7)
