芝士鸡肉烤饼Chicken Cheese Filled Naan

【面团材料】
即发酵母1 1/2茶匙+2汤匙温水、普通面粉300克(筛过)、牛奶125毫升、A蛋1粒、白糖1茶匙、白油或溶解牛油2茶匙、盐1/2茶匙

【馅料】
咖哩或烤鸡肉(切丝)、cheddar芝士100克(切丝)

【顶料】
cheddar芝士、蒜茸及芝麻等
额外面粉

【做法】
1.把酵母和温水混合,放置10分钟让它发酵。
2.把面团所有材料和发酵酵母混合,搓成光滑面团。(图1-2)
3.把面团放在涂少许油的容器里,加布覆盖,让它醒1小时至涨发至双倍。
4.把面团搓匀后分成4份。(图3)
5.在桌面撒面粉,把面团擀成20公分圆圈,然后把1汤匙肌肉和2汤匙芝士铺在烤饼上面,包好封口。(图3-6)
6.把烤饼涂油后轻轻擀平。
7.在圆面皮涂少许白油或牛油,然后撒上顶饰料或留白。(图6)
8.用布覆盖面皮再涨发20分钟。
9.把烤饼放入预热至200℃的烤炉里烤5-10分钟至转黄色即可。(图7-8)

【Dough Ingredients】
1 1/2tsp instant yeast, 2 tbsps warm water, 300g plain flou (sifted), 125ml milk, 1 “Grade A” egg, 1 tsp sugar, 2 tsps ghee or melted butter, 1/2 tsp salt

【Filling】
shredded chicken meat from any curry/roast chicken, 100g cheddar cheese(shredded)

【Topping】optional
grated cheddar cheese, chopped garlic, sesame seeds
Extra flour for dusting

【Method】
1.Combine yeast with warm water & set aside for 10 minutes or until frothy.
2.In a mixing bowl, mix all dough ingredients together with the frothy yeast.Knead until smooth & elastic dough is achieved.(pic 1-2)
3.Place dough in a lightly oiled bowl & cover with a damp tea towel or cling film for 1 hour or until dough doubles up.
4.Pinch down dough & divide dough into 4 portions.Lightly dust board with some flour & roll out each dough into a 20cm circle. Place a heaped tablespoon or more chicken meat & 2 tbsp of cheese, wrap up to enclose filling. (pic 3-6)
5.Slowly roll to flatten the filled naan, being careful not to break the skin.
6.Brush each circle with some ghee/melted butter & sprinkle with topping ingredients or leave plain (pic 6)
7.Cover & rest dough with tea towels until it puffs up about
20 minutes.
8.Bake naan in a pre-heated oven @ 200℃ for 5-10 minutes or until naan is light brown.(pic 7-8)
