花生酱鸡肉汉堡包Chicken Burger with Peanut Butter and Jam

【花生酱肉饼材料】可做6-8个
鸡肉碎600克、大葱1粒(剁碎)、混合香草1茶匙、狄绒芥末酱1茶匙、A蛋1粒(打散)、软面包糠35克、粗粒花生酱100克、盐和胡椒粉适量

【配料】
汉堡包6-8个(横切开,涂牛油烤香)、红灯笼椒2粒(切圈)、额外粗粒花生酱、蓝莓果酱、番茄片、芝士片、生菜

【花生酱肉饼做法】
1.把所有肉饼材料混合均匀,然后分成135-150克一份。(图1-2)
2.把肉馅做成圆饼状,约135-150克重,肉饼面积应该和所用汉堡包一样大小,放入冰箱30分钟,然后蒸5分钟取出。(图3)
3.起锅热少许油,把肉饼以小火煎至两边熟透。(图3)

【组合】
汉堡包铺上生菜、灯笼椒片、芝士片、煎肉饼及番茄,淋上美乃滋酱、额外花生酱及蓝莓果酱,盖上另外一半面包即可享用。(图5-8)

【Burger patties Ingredients】for 6-8 portions
600g mince chicken,1 big onion (finely chopped), 1 tsp dried mixed herbs, 1 tsp Dijon mustard, 1 “Grade A” egg (beaten), 35 g fresh breadcrumbs, 100 g crunchy peanut butter, salt & pepper to taste

【Sub-Ingredients】
6-8 burger buns (split & buttered, toasted), 2 red cap-sicum (slices), extra peanut butter for topping, Blueber-ry jam for topping, tomatoes (sliced), cucumber (sliced), cheese (slices), lettuce leaves

【Method】
1.Combine all patties ingredients and mix with damp hands. (pic 1-2)
2.Form into round patties about 135 -150 g each. The size of the burger pattie should be the same as the burger bun. Chill for 30 minutes. Steam patties for 5 minutes. (pic 3)
3.Preheat non-stick pan, add some oil & pan fry the burger pattie over low heat until thoroughly cooked, turning over once. (pic 4)

【To Assemble】
Lay a layer of bun, top with lettuce leaf, capsicum sliced, cheese slice, stack the burger patties and toma-to over. Drizzle some mayonaise, extra peanut butter and blue berry jam on top, cover with another half of bun, done. (pic 5-8)
