花肉酸菜炒大肠Stir-fried Pork belly with Intestine

【材料】
猪大肠300克、酸菜250克、连皮五花肉150克、姜3片、红辣椒1条(切片)、水1杯

【调味料】
A:姜1片、白醋1汤匙、八角1粒
B:生抽2汤匙、糖2茶匙、味精1⁄2茶匙

【做法】
1.将猪大肠去除脏物,用盐抓洗后放入滚水中川烫洗净。(图1)
2.镬中注入适量水加入调味料A,然后放入猪大肠,以中火煲约20分钟至大肠够软,取出切段。(图2)
3.花肉切薄片;酸菜切小段。把酸菜放入干镬炒干,取出待用。(图3-5)
4.以2汤匙油爆姜片、下花肉炒香,跟着下猪大肠、酸菜拌炒。(图6-7)
5.倒入水及调味料B焖煮15分钟即可。(图8)

【Ingredients】
300g pig big intestine, 250g pickled mustard , 150g pork belly with skin, 3 slices ginger, 1 red chili (sliced), 1 cup water

【Seasoning】
A:2 slices ginger, 1 tbsp white vinegar, 1 star anise
B:2 tbsp soy sauce, 2 tsp sugar, 1⁄2 tsp MSG

【Method】
1.Devein intestine and rub with salt, then blanch in boiling water and wash thoroughly.(pic 1)
2.Boil seasoning A with adequate water, add in pig intestine and boil in medium heat for about 20 minutes until soften.(pic 2)
3.Slice pork belly thinly; cut pickled mustard into smaller pieces. Stir-fry pickled mustard in dry wok briefly and dish out.(pic 3-5)
4.Heat 2 tbsp oil in wok, sauté ginger and pork belly until fragrant; toss in intestine and pickled mustard.(pic 6-7)
5.Pour in water and seasoning B, simmer in low heat for 15 minutes, done.(pic 8)
