莳萝干咖哩排骨 Dill Dry Curry Ribs

【材料】
排骨600克、马铃薯2粒(烫熟切块后)、蒜茸1汤匙、大葱 2粒(切瓣)、 咖哩叶1束、鲜莳萝1束、
现买肉类咖哩糊料1包、清水2杯、椰浆1杯
【调味料】
Campbells 罐头奶油鸡汤1⁄2罐(约200克)、糖1茶匙、生抽1汤匙、盐适量
【卤料】
八角2粒、桂皮2段、丁香3粒、胡椒粒1汤匙、姜2片、清水3碗、酱油4汤匙、冰糖1小块
【卤排骨做法】
先把排骨川烫滴干水。用瓦煲热油,把卤料中的香料及姜片爆香,然后加入排骨和剩余卤料,焖煮45分钟或至
排骨熟透即可。(图1-2)
【做法】
1. 烧热油,放入排骨炸至金黄色,取出沥干油。(图3)
2. 另外起锅热少许油,放入大葱和蒜头炒香,然后加入咖哩叶、鲜莳萝和咖哩糊料炒至香。(图4)
3. 加入水、排骨和马铃薯,煮滚后加入调味料,转小火把排骨焖软。(图5-7)
4. 最后加入椰浆,再煮滚即可。

【Ingredients】
600g pork ribs, 2 potato (broiled and cut pieces), 1 tbsp garlic, 2
onion (cut wedges), 1 stalk curry leaf, 1 bunch dill, store bough
meat curry paste mixture, 2 cups water, 1 cup coconut milk
【Seasoning】
1⁄2 canned Campbells cream of chicken(200g), 1 tsp sugar, 1 tbsp
soy sauce, dash of salt
【Spice for ribs】
2 star anise, 2 blocks cinnamon, 3 pc cloves, 1 tbsp peppercorn, 2
slices ginger, 4 tbsp soy sauce, 3 bowls water, 1 small piece rock
sugar
【Method for spiced ribs】
Blanch ribs in boiling water and drain. heat oil in claypot, saute
ginger and spices untill fragrant, add in ribs and all other ingredi
ents, simmer in low heat for 45 minutes or until ribs cooked through.

【Method】
1. Heat adequate oil in wok, deep fry spare ribs till golden brown,
dish out and drain.(pic 3)
2. Heat some oil in a clean wok, saute onion and garlic until fragrant,
add in curry leaves, dill and curry paste, saute until aromatic.(pic
4)
3. Add in water, ribs and potato, once boiled, add in seasoning and
turn to medium low heat, simmer until ribs soften.(pic 5-6)
4. Pour in coconut milk and bring to boil again, done.
