菜脯蒜茸蒸银鲳Steamed Silver Promphet With Garlic

【材料】
银鲳1条约800克(洗净)、甜菜脯200克(洗净剁碎)、蒜茸100克、芫茜、葱适量

【鱼汁】(全部慢火煮匀)
鱼露3茶匙、味精1茶匙、清水150毫升、生抽1汤匙、糖2茶匙、鸡精1茶匙、老抽2茶匙

【做法】
1.银鲳上碟用大火蒸15分钟,熟后倒去蒸汁。(图2)
2.将甜菜脯及蒜茸用热油炸至金黄色,隔干油备用。(图3-4)
3.把脆蒜茸及菜莆铺在鱼面上,再淋上鱼汁,洒上芫茜葱,即成。(图5)

【INGREDIENTS】
800g Silver Promphet (wash and scale), 200g pickled radish (wash and chopped), 100g chopped garlic, some coriander and spring onion

【SAUCE】(boil all together)
3 tsp fish sauce, 1 tsp MSG, 150ml water, 1 tbsp soy sauce, 2 tsp sugar, 1 tsp chicken stock granule, 2 tsp dark soy sauce.

【METHOD】
1.Steam the fish in high heat for 15 minutes, and then pour away the gravy. (pic 2)
2.Saut’e pickled radish and garlic with oil until golden brown. (pic 304)
3.Pour fried radish and garlic on top of fish with sauce, and then sprinkle coriander and spring onion. (pic 5)
