葱烧橙汁酱肉Stuffed Onion

【材料】
瘦肉250克(切丁)、大洋葱6 粒

【腌料】
糖1茶匙、鸡蛋白1/2粒、麻油少许、胡椒粉少许、粟粉2汤匙、盐少许、水2汤匙

【酱汁】
鲜橙汁1粒、鲜橙果肉1汤匙、柠檬汁1汤匙、柠檬茸少许、糖1 1/2汤匙、蜜糖1汤匙、水2汤匙、盐少许

【做法】
1.将瘦肉粒稍微拍击使其松软,加入腌料拌均,置放10分钟。(图1)
2.洋葱去除外衣,把中间挖空(保留少许洋葱切细末),然后以热油炸约1分钟,取出,沥油待用。(图 2-3)
3.用同样的油将随好的肉丁炸至金黄色捞起。(图4)
4.锅中留1汤匙油,放入洋葱末炒香,然后倒入酱汁煮滚后,放入已炸好的肉丁炒匀便可盛起。(图 5-6)
5.把洋葱移入烤箱,以200℃烤约5分钟即可。(图7-8)

【Ingredients】
250g lean meat (diced), 6 big onion

【Condiments】
1 tsp sugar, 1/2 egg white, dash of sesame oil, pepper & salt, 2 tbsp corn flour, 2 tbsp water

【Sauce】
1 orange juice, 1 tbsp orange flesh, 1 tbsp lemon juice, some lemon rind, 1 1/2 tbsp sugar, 1 tbsp honey, 2 tbsp water, dash of salt

【Method】
1.Loosen diced meat with cleaver and then marinate with condiments for 10 minutes. (pic 1)
2.Peel onion and scoop out the flesh from center, keep some and chop for later use. Deep fry hollowed onion in hot oil for about 1 minute, dish out and drain. (pic 2-3)
3.Deep fry meat in oil until golden brown. (pic 4)
4.Keep some oil in wok, sauté chopped onion until fragrant, then add in sauce ingredients and bring to boil; toss in fried meat, stir well and dish out. (pic 5-6)
5.Stuff onion with diced meat and then bake in oven at 200℃ for about 5 minutes, done. (pic 7-8)
