蒙古猪肉丸拉面 Mongolian Pork Ball Ramen

材料 :
猪肉碎700克、鲜面包糠1杯、青葱粒½杯、鸡蛋1粒、蒜头3瓣(剁碎)、嫩姜3公分、花雕酒1汤匙、酱油1汤匙、盐
½茶匙、麻油1汤匙、辣椒粉1茶匙、黑胡椒粉适量
酱汁:
食油3汤匙、蒜头4瓣(剁碎)、嫩姜3公分、鸡高汤1杯、酱油1汤匙、黄糖3汤匙、沙茶酱2汤匙、蚝油1汤
匙、辣椒粉1汤匙
配料:
干拉面6-7粒(煮熟滴干)
装饰:
烤芝麻、青葱粒、麻油
做法 :
① 把烤炉预热至200℃,在一个大烤盘里铺铝箔,然后涂少许油。
② 肉丸做法:把所有材料混合,朝一个方向搅拌,并把肉碎摔向容器的内壁数次直到起胶。然后取1汤匙
捏成肉丸。重复步骤至材料用完。接着放入烤炉烤20分钟至微黄即可。(图1-3)
③ 酱汁:起锅热油,把蒜和姜炒香后加入酱汁材料,小火焖煮至稠。(图4-6)
④ 把肉丸放入酱汁中搅拌至沾满酱汁,再把拉面加入搅拌均匀后盛出,装饰上桌。(图7-8)

MEAT BALL INGREDIENTS :
700g minced pork, 1 cup fresh breadcrumbs, ½ cup chopped spring onions, 1 egg, 3 cloves garlic (chopped), 3 cm piece young
ginger, 1 tbsp Shao Hsing wine, 1 tbsp light soy sauce, ½ tsp salt,
2 tsp sesame oil, 1 tsp chili powder, Some ground black pepper
SAUCE:
3 tbsp oil, 4 cloves garlic (chopped), 3 cm piece young ginger (chopped), 1 cup chicken broth, 1 tbsp light soy sauce, 3 tbsp brown
sugar, 2 tbsp Sa Cha sauce, 1 tbsp oyster sauce, 1 tbsp chilli powder
OTHER INGREDIENTS
6 -7 pieces dried ramen noodles (boiled and drain)
GARNISHING:
Toasted sesame seeds, Chopped spring onions, Sesame oil
METHOD :
① Preheat oven to 200℃ Line a large baking tray with aluminum foil and grease lightly.
② Prepare meatballs: In large bowl combine all ingredients and stir well in one direction. Throw the meat paste against the
mixing bowl a few times to achieve a bouncy texture. Scoop 1 tablespoon and roll to form a meatball. Repeat with remaining
mixture. Transfer to prepared tray, bake for 20 minutes till lightlybrowned. (pic 1-3)
③ Prepare sauce: Heat oil in a wok. Fry garlic and ginger till fragrant. Combine remaining Sauce A ingredients and add to wok. Stir
and simmer covered till slightly thickened. (pic 4-6)
④ Place cooked meatballs into the wok and roll around lightly to coat with the sauce. Add cooked noodles and toss until fully
coated with the sauce, dish out and garnish to serve. (pic 7-8)
