蒙古猴头菇 Lion’s Mane Mushroom In Mongolia style

材料:
猴头菇300克、羊角豆100克(切段)、红辣椒2条(剁碎)、香椿酱1大匙、姜3片、鸡蛋1粒
调味料:
(A)自发面粉2大匙(加少许水)
(B)盐少许、糖少许、香菇粉½大匙、豆瓣酱1大匙、辣椒粉1大匙
做法:
1. 将猴头菇加入蛋,拌入调味粉A炸至酥,备用。(图1-3)
2. 热锅炒香豆瓣酱,加入调味(B),煮匀后加入姜片及辣椒碎,再倒入
已炸好的猴头菇,加入香椿酱,炒至收汁即可盛碟。(图4-8)
4. 将羊角豆下火炸至熟盛起, 配搭已炒好的猴头菇一起享用。(图9)

Ingredients A :
300g Lion’s Mane Mushroom,100g lady finger, 2 red chilies,
1 tbsp toon sauce,3 slices ginger, 1 egg
Seasoning :
A: 2 tbsp self-raising flour (+water)
B: dash of salt and sugar,½ tsp mushroom granule stock,1 tbsp bean paste, 1 tbsp chili powder
Method :
1. Dip lion’s mane mushrooms with egg and seasoning A, deep fried till crispy, set aside.(pic 1-3)
3. Heat oil in wok, saute bean paste till fragrant, add in seasoning B, stir well. Add in ginger, chilli, and
mushroom, stirring occasionally Lastly add in toon sauce and cook
until fragrant and sauce thicken, done. (pic 4-8)
4. Deep fried lady finger in hot oil, drain and arrange on plate, serve together with mushroom (pic 9)
