蒜香豆腐蒸鱼头 Steamed Fish Head with Tofu

【材料】
水豆腐1盒、鳙鱼头500g(松鱼)、蒜茸2汤匙、姜茸1汤匙、清水200毫升、红辣椒1⁄2 条(剁碎)
【调味料】
生抽1汤匙、 盐1茶匙、1⁄2 茶匙胡椒粉、鸡精粉1茶匙
【做法】
1.把鳙鱼头洗净切块备用。水豆腐汆烫去豆腥味和定型。
2.把水豆腐切薄片排盘备用。
3.锅子热上油,爆香蒜茸和姜茸;加入调味料和清水煮滚。
4.将鱼头以大火蒸七分钟取出;倒去汤汁备用。(图1)
5.把蒸好的鱼头排在豆腐片上,淋上酱汁在鱼头上,再撒上红辣椒装饰即可享用!(图2-4)

【Ingredients】
1 box soft tofu, 500g Haruan fish head, 1 tbsp chopped garlic, 1 tbsp ginger, 200ml water, 1⁄2 red chilli(chopped)
【Seasoning】
1 tbsp soy sauce, 1 tsp salt, 1⁄2 tsp white pepper, 1 tsp chicken stock granules
【Method】
1. Chop fish head into pieces and wash. Blanch tofu in boiling water and drain.
2. Slice tofu thinly and arrange in plate.
3. Heat oil in wok, sauté garlic and ginger until fragrant, pour in water and seasoning, bring to boil.
4. Steam fish head in high heat for 7 minutes, pour away the sauce.(pic 1)
5. Place steamed fish head on top of tofu slices, pour garlic sauce and red chilli over and serve immediately.(pic 2-4)
