蔬菜鸡肉汤饭Healthy Assorted Vegetable & Chicken Rice Soup

【材料】
牛油2汤匙、月桂叶1片、大葱1粒(切粒)、鸡胸肉200克、米140克、清水或鸡高汤5杯、红萝卜125克(切粒)、芹菜50克(切粒)、玉米笋5条 (切1寸长)、少许盐及胡椒粉调味

【做法】
1.将米洗净,放入慢炖锅里,注入清水或高汤备用。
2.预热平底锅煮溶牛油,爆香月桂叶,加入大葱炒至焦黄。(图1)
3.将炒香的大葱倒入慢炖锅内,并加入其余材料,启动电源,开始烹煮。(图2-5)
4.煮至一半时取出鸡肉将其撕成条状。(图6)
5.将鸡丝放回锅内,捞匀一起趁热享用。

【INGREDIENT】
2 tbsps butter, 1 pc dried bay leaf, 1 big onion (sliced/cubed), 200g chicken breast meat, 140g rice, 5 cups water/chicken broth, 125g carrot (cubed), 50g celery (cubed), 5 stalks baby corn (sliced 1cm thick), salt & pepper to taste

【METHOD】
1.Wash and drain rice, place in crock pot, add in water or chicken broth, set aside.
2.Heat butter with the dried bay leaf, sauté onions till caramelized. (pic 1)
3.Pour the onions into the crock pot, follow by the rest of ingredients and let it cook. (pic 2-6)
4.Half way thru cooking remove the chicken meat & shread it. (pic 6)
5.Return the chicken meat into pot, mix well and serve warm.
