虾米排骨沙葛汤Jicama Rib Soup

【材料】
沙葛500克、排骨400克、虾米35克、青葱1棵、绍兴酒1茶匙、水1.5公升

【调味料】
味精及盐各少许

【做法】
1.将虾米洗净,加水及1⁄2茶匙米酒泡软,备用。
2.沙葛去皮切大块;排骨川烫沸水洗净备用。(图1-3)
3.在瓦煲内烧热少许油,爆香虾米和青葱,淋入绍兴酒,并注入水和沙葛煮滚。(图4-6)
4.转小火加入排骨继续煮1小时以上。(图7)
5.加入调味料便可。(图8)

【Ingredients】
500g Jicama, 400g pork ribs, 35g dried shrimp, 1 stalk spring onion, 1 tsp Chinese cooking wine, 1.5 liter water

【Seasoning】
Dash of salt and MSG

【Method】
1.Wash dried shrimp and then soak in water with 1⁄2½ tsp rice wine until soften.
2.Peel Jicama and cut into pieces; blanch ribs in boiling water and drain.(pic 1-3)
3.Heat some oil in wok, sauté dried shrimp and spring onion until fragrant, add in Chinese cooking wine, water and jicama and bring to boil.(pic 4-6)
4.Turn to low heat and simmer for about 1 hour.(pic 7)
5.Season to taste.(pic 8)
