蚝油炆冬菇Braised Mushroom with Oyster Sauce

【材料】
冬菇15朵(浸软)、蒜头2瓣、西兰花1棵(切小朵)、食油 2汤匙

【调味料】
A:蚝油 2汤匙、生抽 1汤匙、红糖1茶匙、麻油1茶匙、冬菇水200毫升
B:玉米粉1茶匙、清水2汤匙
C:盐½茶匙、食油1汤匙、砂糖½茶匙

【做法】
1.剪去冬菇蒂,挤干水备用。(图1)
2.热油锅,爆香蒜头,加入冬菇以中火略炒,然后加入调味料A拌匀煮至滚,上盖转小火焖约20分钟。加入调味料B打个芡汁,熄火备用。(图2-3)
3.清水加入调味料C煮至滚,放入西兰花川烫至熟,捞起沥干水,排在碟子上。将焖好的冬菇连汁盛起,与配菜西兰花一起享用。

【Ingredients】
15 mushroom(soaked), 2 pips garlic, 1 broccoli (cut florets), 2 tbsp cooking oil

【Seasonings】
A: 2 tbsp oyster sauce, 1 tbsp soy sauce, 1 tsp brown sugar, 1 tsp sesame oil, 200ml soaked mushroom water
B: 1 tsp corn flour, 2 tbsp water
C: 1/2 tsp salt, 1 tbsp cooking oil, 1/2 tsp sugar

【Method】
1.Remove the mushroom stem, drain the water and set aside.(pic 1)
2.Heat some oil in wok, saute garlic till fragrant, add in mushroom and fry well with medium heat. Add in seasoning A , cover the lid and simmer with low heat for 20 minutes. Thicken with seasoning B, set aside. (pic 2-3)
3.Blanch broccoli in boiling water together with seasoning C, drain and place on plate, serve with braised mushroom.
