蛋黄酱拌熏肉卷 Smoked Meat Roll with Mayonnaise Sauce

材料:

熏肉200克、鱼胶300克、马蹄3粒(切碎)、芫茜1汤匙(切碎)、青葱1汤匙(切碎)、干粟粉少许

调味料A:

胡椒粉1/2茶匙、蛋白1粒、盐1/4茶匙

调味料B:

蛋黄酱3汤匙、柠檬汁1茶匙、辣椒酱2汤匙(随意)、幼糖1/2茶匙

Ingredients:

200g smoked meat, 300g fish paste, 3 pcs water chestnut(chopped), 1 tbsp chopped coriander, 1 tbsp chopped spring onion, some corn flour

Seasoning A:

½ tsp pepper, 1 egg white, ¼ tsp salt

Seasoning B:

3 tbsp mayonnaise sauce, 1 tsp lemon juice, 2 tbsp chili sauce (option), ½ tsp castor sugar

 

做法:

1.鱼胶君入调味料A捞匀挞至起胶。Marinate fish paste with seasoning A until springy.

2.加入马蹄碎、芫茜和青葱碎拌匀,成为馅料。Add in chopped water chestnut, coriander and spring onion, well mix into filling.

3.淋少许粟粉在一片熏肉上,放入适量的馅料,卷起,以牙签固定。Sprinkle some corn flour on each meat, and then spread some filling on top and roll up; fix with tooth pith.

4.烧热平底不黏镬,平均摆入腌肉卷,以慢火煎香至熟,取出。Heat up non-stick, arrange meat roll in pan and sear under slow heat until fragrant.

5.把B料混合均匀后,便可拌入蛋黄酱享用。Mixes seasoning B and mix in mayonnaise sauce, ready to serve.
