西式什锦饭Western Jambalaya

【材料】
白米350克(洗净滴干)、橄榄油3-4汤匙鸡肉150克(切丁)、虾200克(去壳留尾)、鸡香肠100克(切片)

【配料】
A:小茴香1茶匙、大葱1粒(切片)、蒜头2瓣(剁碎)
B:番茄2粒(剁碎)、番茄膏1汤匙、辣椒粉1茶匙、鸡高汤600毫升、西芹2枝(切片)、青黄灯笼椒各1粒(切丁)、盐和胡椒粉适量

【腌料】
黄姜粉、盐及白糖各1茶匙

【装饰】
莞荽茸1/4杯

【做法】
1.先用腌料腌鸡肉和虾肉。(图1)
2.起锅热橄榄油,把配料A炒香至大葱软身。(图2-3)
3.把炒料和白米、腌鸡肉、虾、香肠及配料B一起放入电饭煲。(图4-7)
4.盖上电饭煲,开电煮20-30分钟至饭熟。中途搅拌。
5.撒上莞荽茸趁热吃。

【Ingredients】
350 g long grain rice(washed & drained), 3-4 tbsps olive oil, 150g chicken meat (cubed 1.5cm), 200g prawns(peeled with tail kept intact), 100g chicken sausages(sliced)

【Sub-Ingredients】
A:1 tsp cumin, 1 big onion(sliced), 2 cloves garlic (chopped)
B:2 tomatoes(chopped), 1 tbsp tomato paste, 1 tsp cili powder, 600 ml chicken stock , 2 celery sticks (sliced), 1 green and yellow capsicum (cubed), salt & pepper to taste

【Marinades ingredients】
1 tsp each of turmeric powder, salt & sugar

【Garnishing】
1/4 cup Chinese parsley(chopped coarsely)

【Method】
1.Marinate chicken meat, prawns and set aside.(pic 1)
2.Heat olive oil in a wok, sauté sub-ingredients A until fragrant and the onions are caramelized.(pic 2-3)
3.Toss into an electric rice cooker with the rice, marinated chicken meat, seafood, sausages and sub-ingredients B.(pic 4-7)
4.Cover the lid of the rice cooker, press the cook button & cook for 20 -30 minutes till rice cooked, stirring half way through.
5.Serve rice warm garnished with chopped parsley.
