西式卤排骨Western Style Stewed Spare Ribs

【材料】
排骨800克

【腌料】
黑酱油1茶匙、生抽2汤匙、L+P酱2汤匙

【卤汁料A】
月桂叶4片、丁香8粒、蒜头1粒、红萝卡1条(切块)、大葱头1粒(切块)、水1200毫升

【卤汁料B】
生抽1汤匙、HP酱2汤匙、L+P酱2汤匙、蚝油1汤匙、糖2汤匙、鸡精粉1茶匙、蜜糖2汤匙及红酒2汤匙(最后加入)

【做法】
1.排骨每支斩成4寸长宽度,加入腌料拌匀腌制2小时。
2.把已腌好的排骨放入烤箱或以少许油煎至两面呈浅褐色,取出待用。(图2)
3.把卤汁料A煮滚后,熬煮至出味且剩下约800毫升捞出渣,加入卤汁料B和排骨慢火卤至排骨酥软。(图3-4)
4.最后加入蜜糖和红酒拌匀即可趁热享用。(图5)

【Ingredients】
800g spare ribs

【Condiments】
1 tsp black soy sauce, 2 tbsp soy sauce, 2 tbsp L & P sauce

【Stewing sauce A】
4 sprigs bay leaves, 8 pcs clove, 1 whole garlic, 1 carrot (cut wedges), 1 onion (cut wedges), 1200m water

【Stewing sauce B】
1 tbsp soy sauce, 2 tbsp HP sauce, 2 tbsp L&P sauce, 1 tbsp oyster sauce, 2 tsp sugar, 1 tsp chicken stock granule, 2 tbsp honey, 2 tbsp red wine (add in last)

【Method】
1.Chop ribs into 4 inches long and marinate with condiments for 2 hours.
2.Bake or sear the ribs until both sides turn brown.(pic 2)
3.Bring stewing stewing sauce A to boil, and turn to low heat and simmer until flavor emerged and the sauce reduced to about 800ml; filtered and add in spices B and ribs, stew until ribs soften.(pic 3-4)
4.Toss in honey and red wine, dish out and serve hot.(pic 5)
