西施蒸虾Steamed Prawn with Wine

【材料】
九节虾5只、蛋白2粒、绍兴酒80毫升、水80毫升、枸杞适量、适量芫茜、葱、红辣椒丝

【调味料】
盐½茶匙、麻油1茶匙、浓缩鲜汤½汤匙、栗粉½茶匙、油1汤匙

【做法】
1.虾开背去肠泥洗净,抹干水份,排入盘中。(图1)
2.将蛋白、绍兴酒、水及调味料混合均匀,淋在大虾面上,并撒上枸杞。(图2-3)
3.待蒸镬的水滚后,将虾移入大火蒸6分钟,熄火后盖着焗3分钟。(图4)
4.开盖,并再次赞入1汤匙绍兴酒及少许麻油。
5.面上铺上芫茜、葱及红辣椒丝即可。

【INGREDIENTS】
5 tiger prawns, 2 egg white, 80ml Hua Diao wine, 80ml water, some GouQi, some coriander, spring onion and juliennes red chili

【SEASONING】
½ tsp salt, 1 tsp sesame oil, ½ tbsp concentrated stock, ½ tsp corn flour, 1 tbsp oil

【METHOD】
1.Devein and clean prawns with shell intact, pat dry and arrange in plate. (pic 1)
2.Mixes egg white, wine, water and seasoning; and then pour over the prawns, top with GouQi. (pic 2-3)
3.Steam prawns in steamer with high heat for 6 minutes; and then off heat and stay in steamer for 3 minutes. (pic 4)
4.Remove lid, pour in additional 1 tbsp of wine and some sesame oil.
5.Sprinkle coriander, spring onion and red chili on top to serve.
