西瓜虾丸汤Watermelon prawn balls soup(Masak Titek)

【材料】
食油1汤匙、小葱头10粒(剁碎)、虾头虾壳200克、鸡高汤1公升(煮自
2 副鸡壳)、西瓜皮300克、指天椒4-5条(划开)、胡椒粒4-5粒(敲爆)
、盐1/2茶匙或适量

【虾丸材料】
虾肉100克(剁成虾胶)、猪肉碎100克、峇拉煎10克(烤过)、粟米粉1
茶匙、盐1/2茶匙、白糖1/2 茶匙

【做法】
1.把虾丸材料混合,收入冰箱待用。(图1)
2.把西瓜的青皮和红肉削除,只留白肉,切成3公分方块。(图2)
3.起锅热油,把葱头爆香后加入虾壳炒香。(图3)
4.加入鸡高汤煮滚,转小火焖煮15分钟。
5.把汤连虾壳倒入电动研磨器,研磨至细,然后过滤入汤锅中。(图4)
6.虾汤煮滚后加入西瓜皮、胡椒粒及指天椒,焖煮15分钟。(图5)
7.一旦汤香飘逸,加入虾丸,大火滚熟。
8.吃的时候再撒一些胡椒粉。

【Ingredients】
1 tbsp cooking oil, 10 shallots (peeled & chopped), 200g prawn head &
shells, 1 litre chicken stock from boiling 2 chicken carcasses, 300g
watermelon skin, 4-5 bird’s eye chillies (slit), 4-5 crushed white peppercorns,
1/2 tsp salt or to taste

【Prawn meatballs Ingredients】
100g prawn meat (chopped coarsely), 100g minced pork, 10g lightly toasted
shrimp paste, 1 tsp cornflour, 1/2 tsp salt or to taste, 1/2 tsp sugar

【Method】
1.Mix prawn meatballs ingredients in a bowl, set aside in the refrigerator
until needed.(pic1)
2.Cut away the outer green layer of the watermelon skin and any remaining
flesh, leaving only the white part of the skin. Cut into 3cm cubes.(pic 2)
3.Heat oil, saute shallots until fragrant adding in prawn shells.(pic 3)
4.Add stock & bring to a boil. Simmer for 15 minutes.
5.Using an electric blender, finely grind the prawn shells.Sieve the stock into
a clean stockpot.(pic 4)
6.Bring stock to a boil, add watermelon skin, peppercorns, bird’s eye chilly &
simmer for 15 minutes. (pic 5)
7.Once soup is aromatic, drop the prawn meatballs and bring to a quick boil.
8.Serve soup warm with extra grating of pepper.
