豆豉蒸排骨Steamed Ribs with Fermented Soy Bean

[材料]

排骨600克(斩小块)、蒜米1粒(剁碎)、红辣椒碎1条、豆豉1大匙、水梅3粒(去核压烂)

[调味料]

盐1茶匙、糖2茶匙、味精1茶匙、粟粉1汤匙、麻油1茶匙、胡椒粉少许、水少许

[做法]

1.将蒜米及豆豉以3汤匙油爆香,取出待用。

2.把排骨、红辣椒碎、水梅及调味料捞匀。

3.再加入爆香(1)一起捞匀,然后置入蒸盘,以中火蒸约35分钟便可。

 

Ingredients:

600g pork ribs (chop into small pieces, 1 pip garlic (chopped), 1 red chili (chopped), 1 tbsp fermented soy bean, 3 pcs pickled plum (seeded & crushed)

Seasoning:

1 tsp salt, 2 tsp sugar, 1 tsp MSG, 1 tbsp corn flour, 1 tsp sesame oil, dash of pepper and some water

Method:

  1. Sauté garlic and fermented soy bean with 3 tbsp oil until fragrant, set aside.
  2. Marinate ribs with chopped chili, plum and seasoning.
  3. Mix in sauté (1) and then arrange in plate, steam in medium heat for 35 minutes, done.
