豆酱蒸鱼头 Steamed Fish Head with Bean Paste

【材料】
鱼头1个、粟粉适量、青葱1棵(切丝)、适量芫荽(装饰)、麻油2汤匙
【酱料】
兰花牌豆酱2汤匙、嫩姜25克(椿烂)、蒜头1粒(椿烂)、辣椒糊2汤匙、水梅3粒
【调味料】
糖 ⁄ 汤匙
【做法】
1.鱼头洗净斩成小件,洒入少许粟粉拌匀。(图1-2)
2.热镬以2汤匙麻油爆香酱料,加入调味料炒匀,捞起放在鱼块上捞匀。(图3-4)
3.待蒸锅水滚后,放入鱼头以大火蒸10分钟即可。(图5)
4.吃时撒上青葱和芫荽装饰。

【Ingredients】
1 fish head, some corn flour, 1 stalk spring onion(jullienced), some coriander leave for garnishing, 2tbsp sesame oil
【Sauce Ingredients】
2 tbsp Orchid Brand Bean Paste, 25g young ginger (grinded),1garlic, 2 tbsp chilli paste, 3 plums
【Seasoning】1/2 tbsp sugar
【Method】
1.Wash and cut the fish head in bite size, rub with some corn flour, set aside. (pic 1-2)
2.Heat sesame oil in wok, saute sauce ingredients till fragrant, add in seasoning and mix well. Pour the sauce over the fish before steam.

3.Steam the fish head in a steam wok with boiling water for 10 minutes till cooked. (pic 5)
4.Garnish with spring onion and coriander leaves before serving.
